How to Make Baked Boursin Chicken & Potatoes
Ingredients:
5-6 bone-in, skin-on chicken thighs
4 tsp garlic powder, divided
4 tsp paprika, divided
3 tsp Italian seasoning
Salt & pepper to taste
⅓ cup olive oil
1 lemon, zested and juiced
3-4 cloves garlic, minced
1 tsp crushed red pepper flakes (optional)
24 oz bag bite-sized potatoes, halved
5.3 oz Boursin Cheese (Garlic & Fine Herbs)
Directions:
Preheat Oven: Preheat to 375°F.
Season the Chicken: Pat the chicken thighs dry. Season both sides with 2 tsp garlic powder, 2 tsp paprika, 1½ tsp Italian seasoning, salt, and pepper. Set aside.
Prepare the Marinade: In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, crushed red pepper flakes, salt, and pepper. Mix well.
Season the Potatoes: Place halved potatoes in a baking dish. Sprinkle with the remaining garlic powder, paprika, and salt & pepper. Pour half of the marinade over the potatoes and toss to coat.
Assemble the Dish: Lay the seasoned chicken thighs, skin-side up, on top of the potatoes. Gently peel back the skin of each thigh, spread a spoonful of Boursin cheese underneath, and fold the skin back over.
Add the Marinade: Pour the remaining marinade over the chicken.
Bake: Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 30 minutes, or until the chicken is golden and cooked through (165°F internal temperature) and the potatoes are tender.
Serve: Garnish with fresh parsley or additional lemon wedges for an extra pop of flavor.
Tips for Success
Crispier Skin: Broil the chicken for 2-3 minutes at the end for extra crispy skin.
Prep Ahead: Marinate the chicken in the lemon mixture for a few hours to enhance flavor.
Use a Meat Thermometer: Ensure the chicken reaches an internal temperature of 165°F for perfect doneness.
