Ingredients
FISH
4-5 Fresh or Frozen Mahi Mahi fillets
2 Tablespoons Olive Oil
1 Tablespoon Butter
SPICE RUB
3 Tablespoons Flour
1 Teaspoon EACH of garlic powder, onion powder, salt, paprika
½ Teaspoon Pepper
LEMON GARLIC CREAM SAUCE
4-5 Cloves of garlic minced
1 ¼ cup low-sodium chicken broth
½ Cup heavy cream
1 Tablespoon Cornstarch
½ Teaspoon EACH Dried Parsley, dried thyme
Juice from one lemon
Salt & Pepper to taste
Fresh Chives for garnish
Directions
Prepare the Mahi Fillets:
In a medium bowl add the flour, garlic powder, onion powder, paprika, salt, and pepper, and mix together.
Pat dry the mahi fillets and coat each side with the spice mixture.
Add two tablespoons of olive oil to a heavy bottom pan, turn the heat to medium-high, and let the pan get hot. Once the oil starts moving around turn the heat down to medium-low.
Add in butter, let melt, and then add your mahi fillets. Cook for approximately 4-5 minutes. Flip the fillets over and cook for an additional 3-4 minutes. Mahi Mahi should reach an internal temperature of 137°F. If fish is browning too quickly turn the heat down. Remove mahi mahi and put it on a plate, wrap it with foil, and set aside.
I use a spoon to distribute and pat down the flour/spice mixture on each side, I also make sure to get the edges as well.
Prepare the Lemon Garlic Sauce:
In the same skillet add garlic and saute for about 30 seconds on medium heat.
Add chicken broth, lemon juice, and cornstarch, whisk together, and let heat up for about 2-3 minutes.
Add in heavy cream, whisk together, and add in thyme, parsley, salt and pepper.
Set the temperature on low heat and whisk until thickened.
Nestle mahi mahi fillets back into the pan and spoon the sauce over the fillets. Garnish with fresh chives and/or parsley. Serve immediately with rice, potatoes or pasta. (my favorite sides to pair this with is Creamy Lemon Garlic Angel Hair Pasta and Air Fryer Italian Zucchini & Squash)
Tips and Variations
For a Gluten Free Option: Use a Gluten Free Flour (I use tapioca flour)
Spice it up: Add a pinch of red pepper flakes or some chopped fresh herbs for extra flavor.
Add more veggies: Throw in some spinach to get more veggies in.
