There’s nothing better than snuggling up on the couch with a warm bowl of soup, especially when the weather gets chilly. This Sausage Tortellini Soup is my go-to when I’m craving something comforting and filling. The combination of tender tortellini, savory Italian sausage, and fresh vegetables creates a perfect balance of flavors. It’s the kind of soup that warms you from the inside out and is even better when shared with family. Ingredients:

  • 1 lb Ground Mild Italian Sausage, browned

  • 4-5 Large Carrots, peeled and chopped into coin-sized pieces

  • 3-4 Celery Hearts, chopped

  • 1 Yellow Onion, diced

  • 3-4 Cloves Garlic, minced

  • Spice Mixture: ½ tsp each of onion powder, garlic powder, thyme, oregano

  • Salt & Pepper to taste

  • 2-3 Bay Leaves

  • Fresh Basil (Optional)

  • 32 oz Beef Broth

  • 1 Spoonful of Better Than Beef Bouillon

  • ¼ cup Cornstarch, mixed with ¼ cup water

  • 32 oz Half & Half

  • 12 oz Package of Three Cheese Tortellini

  • 5 Cups Fresh Spinach (or a whole bag)

Directions:

  1. Brown the Sausage
    In a skillet, brown the Italian sausage until fully cooked. Transfer the sausage to a crockpot.

  2. Add Vegetables & Broth
    Add the chopped carrots, celery, onion, and minced garlic to the crockpot. Sprinkle the spice mixture (onion powder, garlic powder, thyme, oregano), salt, pepper, and bay leaves over the vegetables. Pour in the beef broth and stir in the Better Than Beef Bouillon.

  3. Slow Cook
    Cover and cook on low for 6-7 hours or on high for 3-4 hours. This slow cooking process will allow all the flavors to develop beautifully.

  4. Thicken the Soup
    Stir in the cornstarch mixture and half & half, followed by the package of tortellini. Cover again and cook for about 45 minutes or until the tortellini is fully cooked.

  5. Add Spinach
    Push the fresh spinach down into the soup, cover, and cook for an additional 5-10 minutes until the spinach wilts into the broth.

Serve
Ladle the soup into bowls and serve with your favorite crusty bread for dipping. Enjoy the warm, hearty goodness!
